- taste it properly! Pour about 20mls in a cup then sip it so that it sits in the back of your mouth for a few seconds. Suck in some air through your teeth and let the flavour explode in your mouth. You will experience many flavours but mostly it will be grassy and bitter (the latter being from all of the healthy polyphenols). Then swallow it. If it's any good it will make you cough!
- use it quickly (the sediment spoils the oil after about 4-6 months)
- drizzle on everything - salads, meat, bread, etc.
- NEVER add balsamic vinegar or other additives otherwise I'll cry. This has plenty of taste on its own!
